Natsu Sake Week Starts

!!NATSUZAKE WEEK @ SAKE DESU | July 3-19!!

Natsuzake is sake made for summer! Fruity, fizzy, light, and gluggable, this sake is meant to be ice cold and consumed in large quantities. For Support Sake's #natsuzakeweek, we went with this flight for $30:

1. Ryoko "Natsu" Junmai Ginjo Nama

Filled with refreshing, summery acidity. The aroma is all about the Meyer lemon and tangerine. So juicy! You might get some fresh bamboo shoot undertones or ripe tomato umami. The palate feels sweet and rich with young pear and peach, though it’s actually rather dry. A blockbuster!

2. Kagura Ruri "Midnight Blue" Junmai Muroka Nama Genshu

Somehow light and rich at the same time, effervescent and refreshing with a complex umami base. This sake is brewed by Kyoto's oldest brewery and is used for ceremonial purposes in Kyoto's Golden Shrine. One glass isn't enough, we suggest drinking a bottle at a time ;)

3. Hyakushun "Fraise" Junmai Ginjo Muroka Nama Genshu

Made with a secret yeast, the brewery tried to create a very modern sake which bursts with strawberry flavor. It’s off-dry but has plenty of acidity to balance, just like a perfectly ripe strawberry.

Weekly Tasting: Kimoto and Yamahai

Learn about and try 4 sake made with traditional lactic fermentation for $20.

Kimoto and Yamahai are two unique ways of brewing sake which allow the sake mash (moromi) to develop its own yeast. Along with this natural, ambient yeast comes a higher buildup of lactic acid, resulting in a lovely complexity and increased acidity.

5-9pm | $20 /person | 109 SE Salmon St, PDX
